Cocoa Espresso Pudding Cake recipe

 


Ingredients :

  • 1 cup all-purpose flour
  • 1 cup sugar (divided)
  • ¼ cup plus 2 tbsp unsweetened cocoa, divided
  • 2 tbsp instant coffee
  • 2 tspn baking powder
  • ¼ tspn salt
  • ½ cup milk
  • 3 tbsp melted butter
  • 1 tspn vanilla extract
  • 1 cup boiling water


Preparation and Cooking Instructions :

  1. Preheat oven to 350°F.
  2. Combine flour, 2/3 cup sugar, ¼ cup cocoa, coffee, baking powder and salt.
  3. Mix together milk, butter & vanilla. Add to dry ingredients. Stir well.
  4. Spray 8" baking pan with nonstick cooking spray.
  5. Pour batter into pan.
  6. Mix together remaining 1/3 cup sugar & 2 tbsp cocoa. Sprinkle over batter.
  7. Pour 1 cup boiling water over batter. Do not stir.
  8. Bake 30 minutes. Serve warm.
