Balsamic vinegar A centuries-old specialty of Modena, Italy, is made from reduced grape juice and is aged and blended for many years in a succession of casks made of different woods and gradually diminishing in size. The result is a thick, tart-sweet, intensely aromatic vinegar.

besan flour also known as chickpea flour - normally available from health food stores.

Bonito Flesh of mostly Pacific food fishes of the genus Sarda of the family Scombridae; related to but smaller than tuna. Fish whose flesh is dried and flaked for Japanese cookery ( katsuo-bushi); may be same species as skipjack tuna.

Bouquet garni A small bunch of mixed, tied together with thread. It is used to flavor dished during cooking and extracted afterwards. A bouquet garni normally consists of a bay leaf, 2 or 3 parsley springs and a thyme sprig.

Brioche A light roll rich with eggs and butter and somewhat sweet.
