Pistachio nuts~ Pistacia vera . The pistachio has been grown
for many years in Sicily, Tunis, Persia and similar countries as well
as Spain and India. The husks are rich in tannin and are used in the East
for dyeing and tanning. The husks are removed before eating which is simplified
by the nut cracking spontaneously when ripe. The kernels are very rich
in iron as well as being a good source of protein and fat. Pistachio kernels
were an ancient symbol of happiness as they were said to guarantee joy
and plenty of lovers.
