Quiche Recipe ~ Crab Quiche

Ingredients :
  • 1 x 9" pastry shell, partially baked
  • 1 tbsp butter
  • 2 tbsp shallots, minced
  • 1 cup crabmeat
  • 1 tbsp flour
  • 1½ cups Swiss cheese, shredded/divided
  • 3 eggs
  • 1 cup half and half
  • ½ tspn salt
  • dash white pepper or hot pepper sauce
  • dash nutmeg
  • minced parsley
Preparation & Cooking Instructions :
  1. Partially bake a 9" pastry shell.
  2. Sauté shallots in butter until tender, about 2 minutes; mix with crabmeat and flour; set aside.
  3. Sprinkle ¾ cup the cheese in the pie shell, then spread with crab mixture.
  4. Sprinkle with remaining 3/4 cup of cheese.
  5. Beat eggs, cream, salt, pepper, nutmeg, and parsley until mixed. Pour into shell.
  6. Bake for 25 to 30 minutes at 350°F. Serves 6 to 8.
