: makes 4 cups
Ingredients :
- 1kg green apples, peeled, cored and roughly chopped
- 125g dried apricots, chopped
- 2 medium onions, finely chopped
- 1 clove garlic, roughly chopped
- 1 cup sultanas
- ¼ cup walnuts, roughly chopped
- 2 tspn salt
- ¼ tspn cayenne pepper
- 1 tspn ground ginger
- 1 cup malt vinegar
- 1 cup soft brown sugar
Preparation and Cooking Instructions
- Combine apple, apricot, onion, garlic, sultanas, walnuts, salt, pepper,
ginger and vinegar in a large heavy-based pan. Cook over low heat for
5 minutes, stirring occasionally. Simmer, with lid on, for 20 minutes.
- Add sugar, cook stirring occasionally, for 10 minutes uncovered, until
mixture is a jam-like consistency.
- Pour mixture into hot sterilized jars and seal immediately. Leave
chutney for 2 weeks before opening.
