Apple, apricot and nut chutney

Preparation time : 35 minutes + standing time  Cooking time : 45 minutes Yield : makes 4 cups


Ingredients :

  • 1kg green apples, peeled, cored and roughly chopped
  • 125g dried apricots, chopped
  • 2 medium onions, finely chopped
  • 1 clove garlic, roughly chopped
  • 1 cup sultanas
  • ¼ cup walnuts, roughly chopped
  • 2 tspn salt
  • ¼ tspn cayenne pepper
  • 1 tspn ground ginger
  • 1 cup malt vinegar
  • 1 cup soft brown sugar

Preparation and Cooking Instructions

  1. Combine apple, apricot, onion, garlic, sultanas, walnuts, salt, pepper, ginger and vinegar in a large heavy-based pan. Cook over low heat for 5 minutes, stirring occasionally. Simmer, with lid on, for 20 minutes.
  2. Add sugar, cook stirring occasionally, for 10 minutes uncovered, until mixture is a jam-like consistency.
  3. Pour mixture into hot sterilized jars and seal immediately. Leave chutney for 2 weeks before opening.
