Ingredients :
- 1¼ cups (275g) caster sugar
- 2 eggs
- 1 tspn vanilla extract
- 1½ cups (225g) plain flour
- ½ cup (75g) self-raising flour
- ½ cup (125g) coarsely chopped glacé apricots
- ¼ cup (40g) pine nuts, toasted
- 2 tspn water
Preparation and Cooking Instructions :
- Preheat the oven to moderate (180°C/160°C fan-forced). Whisk
the sugar, eggs and vanilla extract in a medium bowl until combined.
Stir in the sifted flours, apricots, pine nuts and water. Mix to a soft
dough.
- Knead the dough on a lightly floured surface until smooth. Divide
the dough in half. Roll each half into a 30cm log. Place the logs on
a greased and floured tray.
- Bake in a moderate oven for about 25 minutes or until dry. Cool. Reduce
the oven temperature to slow (150°C/130°C fan-forced).
- Cut the logs into 1cm slices with a serrated knife. Place in a single
layer on ungreased oven trays. Bake in a slow oven for a further 20
minutes or until dry, turning halfway through cooking. Cool on the trays.
Store in a glass jar or airtight container.
