Apricot and Pine Nut Biscotti

Ingredients :

  • 1¼ cups (275g) caster sugar
  • 2 eggs
  • 1 tspn vanilla extract
  • 1½ cups (225g) plain flour
  • ½ cup (75g) self-raising flour
  • ½ cup (125g) coarsely chopped glacé apricots
  • ¼ cup (40g) pine nuts, toasted
  • 2 tspn water


Preparation and Cooking Instructions :

  1. Preheat the oven to moderate (180°C/160°C fan-forced). Whisk the sugar, eggs and vanilla extract in a medium bowl until combined. Stir in the sifted flours, apricots, pine nuts and water. Mix to a soft dough.
  2. Knead the dough on a lightly floured surface until smooth. Divide the dough in half. Roll each half into a 30cm log. Place the logs on a greased and floured tray.
  3. Bake in a moderate oven for about 25 minutes or until dry. Cool. Reduce the oven temperature to slow (150°C/130°C fan-forced).
  4. Cut the logs into 1cm slices with a serrated knife. Place in a single layer on ungreased oven trays. Bake in a slow oven for a further 20 minutes or until dry, turning halfway through cooking. Cool on the trays. Store in a glass jar or airtight container.
