Apricot chicken

Serves : 4  Preparation time : 10 minutes  Cooking time : 55 minutes

Ingredients :

  • 6 chicken thigh cutlets, skin removed
  • 40g packet French onion soup mix
  • 425ml can apricot nectar
  • 425g can apricot halves, drained

Preparation and Cooking Instructions

  1. Preheat the oven to moderate 180°C. Place the chicken thighs in an ovenproof dish. Mix the soup mix with the apricot nectar and pour over chicken.
  2. Bake, covered, for 50 minutes, then add the apricot halves and bake for a further 5 minutes. Serve with creamy mashed potato or rice to soak up all the juices.
