Ingredients :
- 4 oz butter
- 8 oz graham cracker crumbs
for filling :
- 4 oz cream cheese
- ¼ cup sugar (caster)
- 2 tbsp lemon juice
- 2 x eggs
- 1¼ cups cream
- 8 oz blackberries, fresh
- 2 x passionfruit
Preparation and Cooking Instructions :
- Prepare crust : Melt butter. Crush biscuits fine. Combine
butter and biscuit crumbs, mix well. Press evenly over base and side
of 25 cm flan tin
- Bake in a moderate oven 10 minutes; allow to cool.
- For filling : Beat cheese, sugar and lemon juice with
an electric mixer until smooth, beat in eggs one at a time. Add cream
and beat until combined.
- Stir blackberries and passionfruit pulp together and spread onto base
of baked crust.
- Top with filling and bake in a moderate oven for 30 minutes or until
set.
- Cool and refrigerate until cold. Serve with whipped cream and extra
blackberries.
