Baked Blackberry and Passionfruit cheesecake recipe

Ingredients :

  • 4 oz butter
  • 8 oz graham cracker crumbs
    for filling :
  • 4 oz cream cheese
  • ¼ cup sugar (caster)
  • 2 tbsp lemon juice
  • 2 x eggs
  • 1¼ cups cream
  • 8 oz blackberries, fresh
  • 2 x passionfruit


Preparation and Cooking Instructions :

  1. Prepare crust : Melt butter. Crush biscuits fine. Combine butter and biscuit crumbs, mix well. Press evenly over base and side of 25 cm flan tin
  2. Bake in a moderate oven 10 minutes; allow to cool.
  3. For filling : Beat cheese, sugar and lemon juice with an electric mixer until smooth, beat in eggs one at a time. Add cream and beat until combined.
  4. Stir blackberries and passionfruit pulp together and spread onto base of baked crust.
  5. Top with filling and bake in a moderate oven for 30 minutes or until set.
  6. Cool and refrigerate until cold. Serve with whipped cream and extra blackberries.
