Serves : makes 12 muffins
Ingredients :
- 1 cup self-raising flour
- 1 cup allbran
- ¼ cup sugar
- ¼ tspn salt
- grated rind of 1 orange
- 1 cup orange juice/milk
- ¼ cup vegetable oil
- 1 egg
- 1 banana
Preparation and Cooking Instructions
- Measure the flour, allbran, sugar and salt into a large mixing bowl.
Stir ingredients well to combine.
- Grate the orange rind needed for this recipe, then squeeze or juice
the orange and measure the juice quantity. In another container put
the required amount of milk in order to bring the total liquid quantity
up to one cup.
- Combine the orange juice and rind, the vegetable oil and egg and beat
with a fork. Peel the banana and cut into small cubes. Add to the egg
mixture. Add the egg mixture and the milk separately to the dry ingredients
and fold everything together carefully until the flour is dampened,
but the mixture is not smooth.
- Grease muffin tray and put about a ¼ cup of the mixture into
each muffin cup.
- Bake at 225°C for 10 - 12 minutes, until the muffins spring back
when pressed.
