Barbecue Chicken Pizza

Serves : 2 x 8" pizzas


Ingredients :

  For Dough
  • 2 tbsp dry active yeast
  • ¼ cup warm water
  • 2½ cups unbleached flour
  • 1 tspn salt
  • ¼ cup olive oil
  • 2 eggs
  For Sauce
  • 3 tbsp olive oil
  • 2 tbsp minced onion
  • 2 tbsp minced green peppers
  • 2 tbsp minced celery
  • 1 glove garlic, minced
  • ¼ cup white wine
  • ¼ tspn black pepper
  • ½ tspn oregano leaves
  • ½ tspn ground cumin
  • 3 tbsp brown sugar
  • 1¼ cups tomato purée
  • ½ tspn hickory smoked salt
  For Topping
  • 2 tbsp olive oil
  • 1 clove minced garlic
  • 1 lb sliced, boneless skinless chicken breast
  • 8 oz grated smoked gouda cheese
  • ¼ cup sliced black olives

Preparation and Cooking Instructions

  1. For Dough : In a large mixing bowl, dissolve the yeast in the water, let rest for 10 minutes. Add 1 cup of flour, salt and oil. Beat into a smooth batter. Add ½ cup of the flour and the eggs, blend thoroughly.
  2. Turn out onto a floured surface. Knead and gradually add the remaining flour, knead into a smooth ball.
  3. Place into a greased bowl, cover and allow to rise for 1½ hours. Punch down and divide into two. Roll dough into rounds and place into two 8" pans. Dough is now ready for sauce and topping.
  4. For sauce : Heat the oil in a saucepan. Add the onion, green peppers, celery and garlic, sauté until tender. Blend in the remaining ingredients. Bring the sauce to a boil, reduce heat and simmer for 20 minutes.
  5. For topping : pour the oil into a mixing bowl, add the garlic and chicken, toss to coat the chicken. Sauté the chicken in a large skillet.
  6. Spread the dough evenly with the sauce, top with chicken. Sprinkle with the cheese and olives.
  7. Bake in a preheated 450°F oven for 15 minutes or until golden brown. Remove from oven, slice and serve.
