Ingredients :
- 500g green beans
- 1 x 440g can tomatoes
- 2 tbsp olive oil
- 1 large onions, chopped
- 1 clove garlic, crushed
- 2 tspn sugar
- 2 tbsp red wine vinegar
- 1 tbsp chopped fresh basil
- ¼ cup chopped olives
- ground pepper, to taste
- basil sprigs, to garnish
Preparation and Cooking Instructions
- Trim tops and tails from beans and cut into halves. Cook in boiling
water for 5 minutes, drain and rinse in cold water to refresh color.
Set aside. Chop tomatoes, reserving juice.
- Heat oil in pan, add onion and garlic, cook stirring until onion starts
to brown. Sprinkle with sugar and cook until it caramelizes. Add vinegar,
cook 1 minute. Add tomatoes and juice, basil, olives and pepper. Simmer
uncovered for 5 minutes.
- Add beans, simmer 10 minutes. Serve garnished with basil.
