Green Beans with tomatoes

Serves : 6  Preparation time : 10 minutes  Cooking time : 15 minutes

Ingredients :

  • 500g green beans
  • 1 x 440g can tomatoes
  • 2 tbsp olive oil
  • 1 large onions, chopped
  • 1 clove garlic, crushed
  • 2 tspn sugar
  • 2 tbsp red wine vinegar
  • 1 tbsp chopped fresh basil
  • ¼ cup chopped olives
  • ground pepper, to taste
  • basil sprigs, to garnish

Preparation and Cooking Instructions

  1. Trim tops and tails from beans and cut into halves. Cook in boiling water for 5 minutes, drain and rinse in cold water to refresh color. Set aside. Chop tomatoes, reserving juice.
  2. Heat oil in pan, add onion and garlic, cook stirring until onion starts to brown. Sprinkle with sugar and cook until it caramelizes. Add vinegar, cook 1 minute. Add tomatoes and juice, basil, olives and pepper. Simmer uncovered for 5 minutes.
  3. Add beans, simmer 10 minutes. Serve garnished with basil.
