Beef Sloppy Joe

Serves : makes 4    Preparation time : 10-15 minutes  Cooking time : 30-40 minutes

Ingredients :

  • 2 tbsp olive oil
  • 1 large onion, finely chopped
  • 1 tspn beef stock powder
  • 500g lean beef mince
  • 1 tbsp Worcestershire sauce
  • ¼ cup tomato sauce
  • 1 tbsp lemon juice
  • ½ tspn salt
  • 1 tspn dry English mustard powder
  • 2 tspn soft brown sugar
  • 1 tomato, roughly chopped
  • ½ cup frozen peas
  • ½ cup water
  • 1 tbsp cornflour
  • 4 cheese buns
  • 4 lettuce leaves
  • ½ cup snow pea sprouts

Preparation and Cooking Instructions

  1. Heat oil in frying pan, add onion; cook over medium heat 10 minutes or until soft. Add stock and mince, cook over high heat until brown. Add sauces, juice, salt, mustard and sugar. Stir-fry 3 minutes. Add tomato and peas, cook 2 minutes.
  2. Add half the water, bring to boil. Reduce heat to medium, cover and cook 5 minutes. Combine cornflour with remaining water, add to pan and stir until mixture boils and thickens.
  3. Cut buns in half horizontally, toast cut side and butter lightly. Place bun bases on 4 serving plates. On each base place lettuce, sprouts, beef mixture and finally a bun top.
