Blood orange cake with caramel syrup

Serves : 8  Preparation time : 20 minutes  Cooking time : 40 mins for cake 10 mins for syrup

Ingredients :

  • 80g margarine
  • 150g sugar
  • 2 eggs, lightly beaten
  • ¼ cup milk
  • ¼ cup blood orange juice ( from 1 orange )
  • 2 blood oranges, finely chopped
  • 1½ cups self-raising flour
  • 1 blood orange, extra, thinly sliced
    For caramel syrup
  • 1 cup caster sugar
  • ½ cup water
  • ½ cup blood orange juice ( about 2 oranges )

Preparation and Cooking Instructions

  1. Grease a round 18cm cake pan.
  2. Beat margarine, sugar and eggs in a large bowl with an electric mixer until pale and thick. Stir in milk, juice, oranges and flour; pour into prepared pan.
  3. Bake in a moderate oven (180°C) about 40 minutes.
  4. Serve decorated with blood orange slices and drizzled with caramel syrup.
  5. For caramel syrup : Combine sugar and the water in a medium saucepan; simmer, stirring, until sugar dissolves.
  6. Increase heat and boil gently, without stirring, 5 minutes or until syrup is lightly browned and thickened. Carefully pour in juice, simmer about 5 minutes or until very thick and syrupy.
