Ingredients :
- 80g margarine
- 150g sugar
- 2 eggs, lightly beaten
- ¼ cup milk
- ¼ cup blood orange juice ( from 1 orange )
- 2 blood oranges, finely chopped
- 1½ cups self-raising flour
- 1 blood orange, extra, thinly sliced
For caramel syrup
- 1 cup caster sugar
- ½ cup water
- ½ cup blood orange juice ( about 2 oranges )
Preparation and Cooking Instructions
- Grease a round 18cm cake pan.
- Beat margarine, sugar and eggs in a large bowl with an electric mixer
until pale and thick. Stir in milk, juice, oranges and flour; pour into
prepared pan.
- Bake in a moderate oven (180°C) about 40 minutes.
- Serve decorated with blood orange slices and drizzled with caramel
syrup.
- For caramel syrup : Combine sugar and the water in a medium
saucepan; simmer, stirring, until sugar dissolves.
- Increase heat and boil gently, without stirring, 5 minutes or until
syrup is lightly browned and thickened. Carefully pour in juice, simmer
about 5 minutes or until very thick and syrupy.
