Buckwheat pasta

Ingredients :

  • 1 cup buckwheat flour
  • ½ cup semolina flour
  • 1 extra large egg, beaten
  • ¼ cup ice cold milk
  • ice water, only if required

Preparation and Cooking Instructions

  1. Blend the flours in a mixing bowl. Add the egg and milk. Knead into a smooth ball ( add small amounts of ice water if required )
  2. knead the dough for 15 minutes and allow to rest an additional 15 minutes. Roll out the dough. Lightly dust with flour, fold in three and roll out again. Repeat 6-8 times.
  3. Now pass the dough through the pasta machine, setting the rollers gradually down until you reach the desired thickness. The result should be a smooth sheet of dough ready to process as you require.
