Ingredients :
- 1lb calves liver
- 1 onion, sliced
- 1 clove garlic
- 1 fresh chili or pinch of chili powder
- 1 tspn lime or lemon juice
- 2 tbsp peanut oil
- ½ tspn ground ginger
- 1 tspn brown sugar
- 1¼ cups coconut milk
Preparation and Cooking Instructions
- Cut the liver into bite-sized pieces. Put the onion, garlic, and chili
into a mortar, moisten with lime or lemon juice, and pound to a smooth
paste.
- Heat the oil and fry the pounded mixture for 6-7 minutes, stirring
all the time. Add liver, sprinkle with ginger and brown sugar, and cook
for 2-3 minutes. Add coconut milk, simmer for 5 minutes, and serve.
