Ingredients :

  • 1lb calves liver
  • 1 onion, sliced
  • 1 clove garlic
  • 1 fresh chili or pinch of chili powder
  • 1 tspn lime or lemon juice
  • 2 tbsp peanut oil
  • ½ tspn ground ginger
  • 1 tspn brown sugar
  • 1¼ cups coconut milk

Preparation and Cooking Instructions

  1. Cut the liver into bite-sized pieces. Put the onion, garlic, and chili into a mortar, moisten with lime or lemon juice, and pound to a smooth paste.
  2. Heat the oil and fry the pounded mixture for 6-7 minutes, stirring all the time. Add liver, sprinkle with ginger and brown sugar, and cook for 2-3 minutes. Add coconut milk, simmer for 5 minutes, and serve.
