Makes : 5 cups
Ingredients :
- 4 tbsp olive oil
- 2kg brown onions, sliced into wedges
- ½ cup brown sugar
- 4 cups beer
- 1 cup white wine vinegar
- 1½ cup brown sugar, extra
Preparation and Cooking Instructions :
- Heat a large saucepan or jam pan over medium heat. Add the oil, onions
and sugar and cook for 20 minutes or until softened. Add the beer, vinegar
and extra sugar and simmer, stirring occasionally, for 55 minutes or
until golden brown and caramelized. Place into hot sterilized jars and
seal. Store in the fridge for 2-3 months.
