Champignons à la Grecque ~ Marinated Mushrooms

Ingredients :

  • 3 tbsp olive oil
  • 4 shallots, chopped
  • 4 tomatoes, skinned and chopped
  • 4 peppercorns, crushed
  • 6 coriander seeds
  • 1 bay leaf
  • 1 thyme sprig
  • salt
  • 500g (1lb) button mushrooms
  • 4 tbsp dry white wine
  • 2 tbsp tomato paste
  • chopped parsley to garnish


Preparation and Cooking Instructions :

  1. Heat the oil in a pan, add the shallots and fry until soft. Add the tomatoes, peppercorns, coriander seeds, herbs, and salt to taste. Stir in the mushrooms and wine, cover and simmer for 10 minutes.
  2. Transfer the mushrooms to a serving dish. Discard the herbs. Bring the cooking liquor to the boil and boil for 5 minutes until well reduced. Add the tomato paste and spoon over the mushrooms. Sprinkle with parsley and chill before serving.
