Ingredients :
- 3 tbsp olive oil
- 4 shallots, chopped
- 4 tomatoes, skinned and chopped
- 4 peppercorns, crushed
- 6 coriander seeds
- 1 bay leaf
- 1 thyme sprig
- salt
- 500g (1lb) button mushrooms
- 4 tbsp dry white wine
- 2 tbsp tomato paste
- chopped parsley to garnish
Preparation and Cooking Instructions :
- Heat the oil in a pan, add the shallots and fry until soft. Add the
tomatoes, peppercorns, coriander seeds, herbs, and salt to taste. Stir
in the mushrooms and wine, cover and simmer for 10 minutes.
- Transfer the mushrooms to a serving dish. Discard the herbs. Bring
the cooking liquor to the boil and boil for 5 minutes until well reduced.
Add the tomato paste and spoon over the mushrooms. Sprinkle with parsley
and chill before serving.
