Chicken Kiev

Ingredients :
- 4 oz butter, softened
- 1 clove garlic, crushed
- 2 tbsp fresh parsley, chopped
- 2 tspn lemon juice
- 2 tspn grated lemon rind
- 6 chicken breast fillets
- ½ cup plain flour
- 4 cups dry breadcrumbs
- 2 eggs, beaten
- ¼ cup milk
- lemon wedges, to serve
Preparation and Cooking Instructions
- Combine the butter, garlic, lemon juice and rind. Transfer the mixture
to a sheet of foil and shape into a rectangle about 2" x 3".
fold the foil to enclose and chill until firm.
- Trim the chicken of any excess fat or sinew and place between two
sheets of plastic wrap. Use meat mallet or rolling pin to flatten the
chicken to a ¼" thickness.
- Cut the chilled butter into 6 pieces. Place a piece in the center
of each breast, fold in the edges and roll up to enclose. Fasten with
toothpicks and chill until firm. Place the flour and breadcrumbs on
separate plates or baking paper.
- Toss the chicken in the flour, dip in the breadcrumbs. Chill for 1
hour, then toss in the egg and breadcrumbs again. Half fill a heavy-based
frying pan with oil and fry in batches for 5 minutes on each side until
golden and cooked through. Drain on paper towels, remove the toothpicks
and serve with lemon.
