Chicken Parmigiana

Serves : 4      Preparation time : 25 minutes + 30 mins chilling    Cooking time : 35 minutes


Ingredients :

  • 4 chicken breast fillets
  • seasoned flour, for coating
  • dry breadcrumbs, for coating
  • 1 egg, lightly beaten
  • 1 tbsp milk
  • oil, for frying
  • 1 cup ready-made tomato pasta sauce
  • 2 tbsp shredded fresh basil leaves
  • ½ cup grated parmesan cheese
  • 3½ oz mozzarella cheese, thinly sliced

Preparation and Cooking Instructions

  1. Trim the chicken of any excess fat and sinews and pat dry with paper towels. Place between sheets of plastic wrap and flatten with a meat mallet or rolling pin to ¼" thick.
  2. Place the flour and breadcrumbs on 2 plates, and the egg and milk together in a shallow bowl. Coat the chicken with flour, shaking off the excess, dip in egg mixture, drain and coat in breadcrumbs. Chill for 30 minutes.
  3. Preheat oven to moderate 350°F. Heat 1¼" of oil in frying pan. Add the chicken and cook for 3-4 minutes each side until golden. Drain on paper towels. Place in a single layer in a greased shallow ovenproof dish.
  4. Spoon the combined tomato sauce and basil over the chicken, sprinkle with parmesan cheese and lay the mozzarella on top. Bake for 20-25 minutes until golden.
