Chicken and herb koftas

Serves : 4-6  Preparation time : 20 minutes  Cooking time : 10 minutes


Ingredients :

  • 500g chicken mince
  • 1 onion, grated
  • ¼ cup chopped fresh parsley
  • 1 tbsp garlic chives, chopped
  • 1 tbsp fresh thyme, chopped
  • 1 egg, lightly beaten
  • ½ cup fresh breadcrumbs
  • 20g butter
  • 1 tbsp oil
  • hummus, to serve
  • 8 pitta breads, to serve
  • tabbouleh, to serve
  • chili sauce, optional

Preparation and Cooking Instructions

  1. Combine the chicken mince, onion, herbs, egg, breadcrumbs and some salt and pepper in a large bowl and mix well with hands. Divide the mixture into 8 equal portions.
  2. Roll each portion into a sausage shape with lightly floured hands. Melt the butter and oil in a frying pan and cook the koftas over medium heat, turning frequently, until golden brown and cooked through.
  3. To serve, spread the hummus over the pitta bread, spoon over the tabbouleh and top with a kofta. Add chili sauce if desired, roll up and serve.
