Chicken and herb koftas

Ingredients :
- 500g chicken mince
- 1 onion, grated
- ¼ cup chopped fresh parsley
- 1 tbsp garlic chives, chopped
- 1 tbsp fresh thyme, chopped
- 1 egg, lightly beaten
- ½ cup fresh breadcrumbs
- 20g butter
- 1 tbsp oil
- hummus, to serve
- 8 pitta breads, to serve
- tabbouleh, to serve
- chili sauce, optional
Preparation and Cooking Instructions
- Combine the chicken mince, onion, herbs, egg, breadcrumbs and some
salt and pepper in a large bowl and mix well with hands. Divide the
mixture into 8 equal portions.
- Roll each portion into a sausage shape with lightly floured hands.
Melt the butter and oil in a frying pan and cook the koftas over medium
heat, turning frequently, until golden brown and cooked through.
- To serve, spread the hummus over the pitta bread, spoon over the tabbouleh
and top with a kofta. Add chili sauce if desired, roll up and serve.
