Chicken bake

Ingredients :
- 1½ lb chicken thigh fillets
- 1oz butter
- 1 onion, chopped
- 2 sticks celery, chopped
- 2 tbsp flour
- 1 cup chicken stock
- ¾ cup milk
- 4oz ham steak, thinly sliced
- 2 tspn chopped fresh parsley
- 3 hard-boiled eggs, quartered
- 3 potatoes, peeled and very thinly sliced
- ½ oz butter, melted
- paprika, to garnish
Preparation and Cooking Instructions
- Preheat the oven to 200°C. Trim the chicken of any excess fat
or sinew. Melt the butter in a frying pan and cook the chicken in batches
over high heat for 10 minutes, or until browned and cooked through.
Remove from the pan. Add the onion and celery and cook for 5 minutes
until soft, then stir in the flour.
- Remove from the heat and gradually add the stock and milk. Return
to the heat and stir until the mixture boils and thickens. Cut the chicken
into bitesize pieces and add to the pan with any juices, the ham, mustard
and parsley; mix well and season. Stir in the eggs.
- Spoon the mixture into a 6-cup capacity shallow ovenproof dish. Layer
the potatoes over the chicken, brush with the melted butter and sprinkle
lightly with paprika.
- Bake for 40-50 minutes until the potatoes are crisp and golden.
