Chicken dim sims

Ingredients :
- 1 egg white
- 1 tbsp cornflour
- 1½ tspn soy sauce
- 1 tspn sesame oil
- 1 lb chicken thigh fillets, roughly chopped
- 3½ oz baby bok choy, finely chopped
- ¼ cup canned water chestnuts, chopped
- ¼ cup spring onions, finely chopped
- 2 tbsp fresh coriander, finely chopped
- ½ tbsp fresh ginger, finely grated
- 8 oz won ton wrappers
For dipping sauce :
- ¼ cup soy sauce
- ¼ cup water
- 1 tbsp fresh lime juice
Preparation and Cooking Instructions
- Place the egg white in a large bowl and beat lightly. Whisk in the
cornflour, soy sauce and sesame oil.
- Place the chicken thighs in a food processor and process until finely
chopped. Stir in the egg white mixture with the bok choy, water chestnuts,
spring onion, coriander and ginger. Mix the ingredients thoroughly and
season with salt.
- Working with 1 wrapper at a time, place 2 tspn of the mixture onto
the center of each wrapper. Gather the wrapper up to the center like
a pouch, leaving the top open, and gently press down the filling to
firmly pack. Tap on the bench to flatten the base.
- Brush a steamer lightly with the oil and place the dim sims in a single
layer ( they will need to be cooked in batches). Bring a pan of water
to the boil and place the steamer on top. Cover and steam for about
15 minutes per batch.
- To make the dipping sauce, place all the ingredients in a small bowl
and stir to combine. Serve with the warm dim sims.
- Cooks notes : Steamers often have more than one layer, so it
is possible to steam more than one batch at a time.
