Chicken lasagna

Ingredients :
- 1 clove garlic, crushed
- 1 tbsp oil
- 250g frozen spinach, thawed
- 50g butter
- 50g flour
- 2 cups milk
- 1 cup cheddar cheese, grated
- 2 cups chicken, cooked and diced
- 3 sheets fresh lasagna
- ½ cup cheddar cheese, grated, extra
Preparation and Cooking Instructions
- Preheat the oven to moderate 180°C. Fry the garlic in the oil,
then add the spinach and cook until the water has evaporated. Season
and set aside.
- Melt the butter, stir in the flour and cook for 1 minute. Add the
milk gradually, stirring, then bring to the boil and cook for 2 minutes.
Stir in the cheese, season and cool.
- Add ½ cup of the cheese sauce to the spinach and put a third
of the spinach mixture into an ovenproof dish. Cover with a sheet of
lasagna, then another third of the spinach mixture. Sprinkle over half
the chicken and cover with lasagna. Repeat with the remaining spinach,
chicken and lasagna, and finish by pouring on the cheese sauce.
- Sprinkle over the extra cheese and bake for 30-40 minutes.
