Chicken schnitzels Florentine

Ingredients :
- For tomato sauce : 1 tbsp olive oil
- 1 onion, finely chopped
- 2 cloves garlic, crushed
- 14oz can chopped tomatoes
- ¼ cup white wine or water
- 1 tspn sugar
- ½ tspn dried oregano
- 1 lb English spinach, washed, drained and stalks removed
- 4 chicken breast fillets, tenderloins removed
- ¼ cup cream
- flour, for coating
- 1 oz butter
- 1 tbsp olive oil
- 3 oz Gruyére or cheddar cheese, grated
Preparation and Cooking Instructions
- To make tomato sauce, heat the oil in a pan. Add the onion and garlic
and cook for 5 minutes until soft. Add the tomatoes, wine, sugar and
oregano and cook for 15 minutes over low heat until thick and reduced.
- Roughly chop the spinach and place in a pan. Cook over medium heat
for 2-3 minutes, or until it is wilted. Cool and squeeze dry. Fold through
the cream and season.
- Trim the chicken of any fat or sinew, pat dry and place each piece
between 2 sheets of plastic wrap. Using a mallet or rolling pin, gently
flatten out to ½ " thick.
- Lightly coat the chicken with the flour and shake off any excess.
Heat the butter and oil in a large heavy-based frying pan. Cook the
schnitzels for 2 minutes each side, or until lightly browned.
- Top each schnitzel with the spinach and grated cheese. Pour the tomato
sauce around the chicken, taking care not to cover the cheese.
- Cover the pan and cook over low heat for 10-15 minutes, or until the
cheese has melted.
