Chili barbecue chicken

Ingredients :
- 2 x 2lb chickens
- 2 tbsp olive oil
For barbecue sauce :
- ¼ cup olive oil
- ½ cup tomato sauce
- 1 tbsp red wine vinegar
- 2 cloves garlic,crushed
- 1 red onion, chopped
- 1 small red chili, seeded and chopped
- 1 small green chili, seeded and chopped
- 2 tspn mustard
- 2 tspn Worcestershire sauce
- 1 tspn dried oregano
- pinch cayenne pepper
- 2 tbsp lime juice
- 1-2 tbsp sweet chili sauce
Preparation and Cooking Instructions
- Using a pair of scissors, cut the chickens in half lengthwise along
the breastbone and along each side of the backbone, discarding the backbone.
Flatten gently, then thread onto metal skewers.
- To make barbecue sauce : Place all ingredients except the juice
and chili sauce in a pan. Cook over low heat for 10 minutes. Cool, purée
in a food processor, then add the juice and chili sauce.
- Pour a third of the sauce in a bowl. Add the oil and brush thickly
over the chickens, reserving some for basting. Cover and chill the chickens
for 2-3 hours or overnight.
- Preheat oven to moderate 180°C. Place the chickens on a rack in
the roasting dish filled with enough water to cover its base. Brush
with the marinade and bake for 40-50 minutes, or until cooked, basting
frequently. Cut into quarters and serve with the remaining sauce.
- Cooks notes : This sauce is fairly mild. For a more fiery flavor
increase the chili, cayenne and chili sauce to taste.
