Chili pepita prawns

Serves : makes 8
Ingredients :
- 24 uncooked medium prawns
- ¼ cup pepitas,
toasted
- ¼ cup sesame seeds, toasted
- ¼ cup roughly chopped fresh coriander leaves
- 1 tbsp lime juice
- 3 tspn sambal oelek
- 1 clove garlic, chopped
- 1 tspn sugar
Preparation and Cooking Instructions
- Shell and devein prawns, leaving tails intact. Process remaining ingredients
until just combined ( the mixture should not be smooth).
- Transfer pepita mixture to large bowl, stir in prawns; cover, refrigerate
3 hours or overnight.
- Thread 3 prawns onto each skewer, grill or barbecue about 3 minutes
on each side or until prawns are cooked through.
- Cooks notes : Soak bamboo skewers in water for several hours
or overnight to prevent them from burning. Pepitas are dried
pumpkin seed kernels. Sambal oelek is a salty paste made from
ground chilies.
