Chilled Cod Pâté with Melba toast

Serves : 4-6 Preparation

Ingredients :
- 500g smoked cod
- ¼ cup olive oil
- 1 clove garlic, crushed
- 2 tbsp plain flour
- ¼ cup lemon juice
- 1 cup milk
- Melba toast
- lemon and dill, to serve
Preparation and Cooking Instructions
- Cover fish with cold water in a large pan. Bring slowly to simmer,
cook uncovered 10-15 minutes. Strain water, flake the flesh and remove
bones.
- Heat oil in a large pan, add garlic and flaked fish, stir 1 minute.
Add flour and stir over a low heat. Add lemon juice gradually to the
pan, stirring until the mixture is smooth. Add milk gradually and stir
until mixture boils and thickens.
- Pour mixture into food processor bowl and process 30 seconds until
smooth. Spoon into individual serving dishes ( ½ cup capacity)
and refrigerate until firm. Serve with melba
toast and garnish with dill and lemon.
