Chinese roast duck ~ Shiu Ngap

Serves : 6  Preparation time : 15 minutes  Cooking time : 1 hour

Ingredients :

  • 2.5kg duck
  • salt
  • 2 tbsp brandy
  • 2 tspn soya sauce
  • 3 cloves garlic, crushed
  • 30g spring onions, chopped

Preparation and Cooking Instructions

  1. Rub duck with salt. Mix 1 tbsp brandy, 1 tspn soya sauce, half the garlic and half the spring onions. Put the mixture inside the duck, and sew up opening.
  2. Preheat oven to 220°C . Mix the rest of the ingredients together and rub some of the mixture all over the duck. Leave to stand until the mixture dries and repeat the rubbing process. Roast the duck for about 1 hour in the preheated oven, on a grid in the roasting pan. Add a little water to the pan and brush the duck with the remainder of the mixture every 15 minutes. Brown the bird well. Reduce the pan juice and serve as gravy with the duck.
