Ingredients :
- ½ cup (125ml) water
- 1 cup (220g) caster sugar
- 500g dark chocolate, chopped finely
- 325g butter, chopped
- 7 eggs
- cocoa powder or icing sugar, for dusting
- berries, thick cream, for serving
Preparation and Cooking Instructions :
- Grease and line base and side of a 25cm round cake pan.
- Place water and half sugar in a medium pan; bring to the boil. Reduce
heat, simmer, uncovered, for 2 minutes. Stir in the chocolate and the
butter, stir over a very low heat until smooth. Cool.
- Preheat the oven to slow (120°C/100°C fan-forced).
- Meanwhile, beat eggs and remaining sugar in a medium bowl with an
electric mixer until the mixture quadruples in size, about 3 minutes.
Transfer to a large bowl, then fold in the chocolate mixture.
- Pour cake mixture into the prepared pan, place in baking dish with
enough boiling water to come halfway up the pan side. Bake in a slow
oven for about 1 hour or until just set. Remove from dish, cool cake
in pan before turning out. Refrigerate several hours or overnight.
- Serve cake dusted with sifted cocoa and berries and cream, if desired.
