Chocolate Duck ~ Pato Ng May Tsokolate

Ingredients :
- 4 tbsp oil
- 2.5kg duck, dressed
- 1 tspn wine vinegar
- 3 tbsp sherry
- juice of 1 lime or lemon
- 1 bay leaf
- 2 sprigs parsley
- 2 carrots, thinly sliced
- 60g bitter cooking chocolate, grated
- ¾ cup stock
- salt and pepper to taste
- 8-12 chipolata sausages - optional
Preparation and Cooking Instructions
- Heat the oil in a large pan and brown the duck on all sides.
- Add the rest of the ingredients, except the sausages, cover with a
well-fitting lid and cook over a low heat for 1 hour.
- Add in the sausages, if used, and continue to cook for another 25-30
minutes, until the duck is tender. Serve with boiled rice.
