Chocolate Duck ~ Pato Ng May Tsokolate

Serves : 4  Preparation time : 3 minutes  Cooking time : 1 hour 35-45 minutes


Ingredients :

  • 4 tbsp oil
  • 2.5kg duck, dressed
  • 1 tspn wine vinegar
  • 3 tbsp sherry
  • juice of 1 lime or lemon
  • 1 bay leaf
  • 2 sprigs parsley
  • 2 carrots, thinly sliced
  • 60g bitter cooking chocolate, grated
  • ¾ cup stock
  • salt and pepper to taste
  • 8-12 chipolata sausages - optional

Preparation and Cooking Instructions

  1. Heat the oil in a large pan and brown the duck on all sides.
  2. Add the rest of the ingredients, except the sausages, cover with a well-fitting lid and cook over a low heat for 1 hour.
  3. Add in the sausages, if used, and continue to cook for another 25-30 minutes, until the duck is tender. Serve with boiled rice.
