Cioppino ~ Italian seafood stew

Ingredients :
- 1 tbsp olive oil
- 1 medium onion, chopped
- 2 trimmed celery sticks, chopped
- 2 cloves garlic, crushed
- 4 medium tomatoes, chopped
- 1 cup canned tomato purée
- ½ cup white wine
- 2 cups fish stock
- 750g uncooked king prawns, peeled, deveined
- 600g swordfish steaks, cut into 3cm cubes
- 250 clams in shell
- 200g scallops
- 2 tbsp basil, chopped
- ¼ cup fresh parsley, chopped
Preparation and Cooking Instructions
- Preheat oven to 180°C. Heat oil in frying pan, cook onion, celery
and garlic, stirring, until soft. Add tomato, purée, wine and
stock, bring to the boil.
- Spoon into an ovenproof dish. Add prawns, fish, clams and scallops,
cover with foil or a lid, bake about 15 minutes or until seafood is
cooked through, stirring occasionally.
- Serve sprinkled with basil and parsley.
- Cooks notes : Great served with rice
or steamed potatoes
