Cioppino ~ Italian seafood stew

Serves : 4  Preparation time : 30 minutes  Cooking time : 25 minutes


Ingredients :

  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 2 trimmed celery sticks, chopped
  • 2 cloves garlic, crushed
  • 4 medium tomatoes, chopped
  • 1 cup canned tomato purée
  • ½ cup white wine
  • 2 cups fish stock
  • 750g uncooked king prawns, peeled, deveined
  • 600g swordfish steaks, cut into 3cm cubes
  • 250 clams in shell
  • 200g scallops
  • 2 tbsp basil, chopped
  • ¼ cup fresh parsley, chopped

Preparation and Cooking Instructions

  1. Preheat oven to 180°C. Heat oil in frying pan, cook onion, celery and garlic, stirring, until soft. Add tomato, purée, wine and stock, bring to the boil.
  2. Spoon into an ovenproof dish. Add prawns, fish, clams and scallops, cover with foil or a lid, bake about 15 minutes or until seafood is cooked through, stirring occasionally.
  3. Serve sprinkled with basil and parsley.
  4. Cooks notes : Great served with rice or steamed potatoes
