Serves : 4  Preparation time : 20 minutes  Cooking time : 5-10 minutes


Ingredients :

  • 6 thick rashers bacon, cut in 3cm pieces
  • 30g butter
  • 100g button mushrooms, sliced
  • cracked pepper
  • 4 wholemeal bread rolls
  • green oak leaf or butter lettuce
  • 1 large ripe tomato, thinly sliced
  • 1 firm ripe avocado, peeled and thinly sliced
  • ¼ cup fresh basil leaves
  • whole egg mayonnaise, optional

Preparation and Cooking Instructions

  1. Place bacon pieces in an ungreased frying pan, cook over medium heat until crisp. Drain on paper towels; keep warm. Add butter, sliced mushrooms and pepper to pan. Cook, stirring 2-3 minutes or until brown. Remove pan from heat.
  2. Cut rolls in half horizontally. Lightly toast cut sides if desired. Place roll bases on 4 serving plates. On each base place lettuce leaves, tomato, avocado, bacon, mushrooms, basil leaves and a dollop of mayonnaise if using. Finish with a roll top.
