Broccoli Bake

Ingredients :
- 2 onions, ringed
- 1 tbsp butter
- 1 tbsp oil
- 3 tbsp wholemeal flour
- 2 cups skim milk
- 1 cup cottage cheese
- 1 tbsp caraway seeds
- ¼ cup toasted wheatgerm
- 1 cup wholemeal breadcrumbs
- 1 cup grated cheese
- 3 cups broccoli or cauliflower, lightly cooked
- ¼ cup chopped parsley
- 1 green capsicum, chopped
- 1 red capsicum
- 1 cup grated carrot
- 1 cup nuts ( pinenuts, cashews or blanched almonds)
Preparation and Cooking Instructions :
- Sauté onion rings in a little.
- Use the butter/oil to make sauce by blending in the wholemeal flour.
Cook for a few minutes then add milk and stir until thickened.
- Add cottage cheese, caraway seeds and wheatgerm and cook until well
blended.
- Combine vegetables and nuts in a large casserole dish. Add sauce.
- Top with bread crumbs and cheese and cook in a moderate oven until
heated thoroughly - about 30 minutes.
- Serve with garlic bread.
