Broccoli and Zucchini salad

Ingredients :
- 1 cup mushrooms
- light French vinaigrette dressing
- 1 cup broccoli florets
- 1 medium sized zucchini
- 1 cup bean sprouts
- ½ cup walnuts, roughly chopped ( or pecan nuts)
- 1 stick celery, chopped
- chopped chives
Preparation and Cooking Instructions :
- Slice mushrooms finely and marinate in dressing in refrigerator for
½ to 1 hour.
- Break broccoli into small florets, steam gently until barely cooked.
Broccoli should still be firm. Rinse under cold water, drain and set
aside.
- Steam zucchini in similar manner. Do not overcook. Rinse under cold
water and set aside.
- Combine broccoli, zucchini, celery, nuts, bean sprouts and chives.
- Add to the mushrooms and toss well. Refrigerate until ready to serve.
