Broccoli and Zucchini salad

Ingredients :

  • 1 cup mushrooms
  • light French vinaigrette dressing
  • 1 cup broccoli florets
  • 1 medium sized zucchini
  • 1 cup bean sprouts
  • ½ cup walnuts, roughly chopped ( or pecan nuts)
  • 1 stick celery, chopped
  • chopped chives


Preparation and Cooking Instructions :

  1. Slice mushrooms finely and marinate in dressing in refrigerator for ½ to 1 hour.
  2. Break broccoli into small florets, steam gently until barely cooked. Broccoli should still be firm. Rinse under cold water, drain and set aside.
  3. Steam zucchini in similar manner. Do not overcook. Rinse under cold water and set aside.
  4. Combine broccoli, zucchini, celery, nuts, bean sprouts and chives.
  5. Add to the mushrooms and toss well. Refrigerate until ready to serve.
