Curried Avocado soup with pinenuts

Serves : 4 - 6


Ingredients :

  • 1 medium onion, finely chopped
  • 1 clove garlic, peeled and crushed
  • 1 stalk celery, strings removed and chopped finely
  • 3 tbsp butter
  • 1 tspn curry powder
  • 1 potato, peeled and diced
  • 600 ml chicken stock
  • 2 avocado, well ripened
  • juice of 1 lemon
  • 1 cup cream
  • ¼ cup pine nuts, chopped & finely sautéed
  • salt and pepper, to taste
  • 1 tbsp chopped chives


Preparation and Cooking Instructions :

  1. Melt butter in large, heavy based saucepan. Sauté onion until transparent.
  2. Add garlic and celery, stir occasionally until vegetables are softened and golden. Add curry powder, and cook further 2 - 3 minutes.
  3. Meanwhile boil potato in stock until soft.
  4. Purée avocado and lemon juice in food processor, add puréed avocado, sautéed vegetables and potato to some of the stock.
  5. Return to saucepan with remainder of the stock and blend in cream and seasonings.
  6. Add the pine nuts and gently heat the soup, but do not let boil. Serve garnished with chopped chives.
