Curried Avocado soup with pinenuts

Ingredients :
- 1 medium onion, finely chopped
- 1 clove garlic, peeled and crushed
- 1 stalk celery, strings removed and chopped finely
- 3 tbsp butter
- 1 tspn curry powder
- 1 potato, peeled and diced
- 600 ml chicken stock
- 2 avocado, well ripened
- juice of 1 lemon
- 1 cup cream
- ¼ cup pine nuts, chopped & finely sautéed
- salt and pepper, to taste
- 1 tbsp chopped chives
Preparation and Cooking Instructions :
- Melt butter in large, heavy based saucepan. Sauté onion until
transparent.
- Add garlic and celery, stir occasionally until vegetables are softened
and golden. Add curry powder, and cook further 2 - 3 minutes.
- Meanwhile boil potato in stock until soft.
- Purée avocado and lemon juice in food processor, add puréed
avocado, sautéed vegetables and potato to some of the stock.
- Return to saucepan with remainder of the stock and blend in cream
and seasonings.
- Add the pine nuts and gently heat the soup, but do not let boil. Serve
garnished with chopped chives.
