Macadamia Loaf

Ingredients :

  • 1½ cups coarsely ground macadamia nuts
  • 2 cups fresh breadcrumbs
  • 1 egg, lightly beaten
  • 1 cup chicken or vegetable stock
  • 1 tspn ground basil
    for filling :
  • 1 cup mushrooms, chopped
  • 2 medium onions, finely chopped
  • 1 tbsp butter
  • 1 tspn chopped parsley
  • 1 tspn chopped chives
  • salt and pepper, to taste


Preparation and Cooking Instructions :

  1. Bind nuts and breadcrumbs together with egg and stock.
  2. Place half the mixture into a small greased and lined loaf tin. Add filling which is made by frying the onions and mushrooms in butter until soft.
  3. Add parsley, chives and season with salt and pepper.
  4. Cover filling with remaining nut and breadcrumb mixture.
  5. Cover with foil and bake at 180ºC for 30 minutes. Remove foil and continue baking for 10 - 5 minutes until brown. Serve hot or cold.
