Macadamia Loaf

Ingredients :
- 1½ cups coarsely ground macadamia nuts
- 2 cups fresh breadcrumbs
- 1 egg, lightly beaten
- 1 cup chicken or vegetable stock
- 1 tspn ground basil
for filling :
- 1 cup mushrooms, chopped
- 2 medium onions, finely chopped
- 1 tbsp butter
- 1 tspn chopped parsley
- 1 tspn chopped chives
- salt and pepper, to taste
Preparation and Cooking Instructions :
- Bind nuts and breadcrumbs together with egg and stock.
- Place half the mixture into a small greased and lined loaf tin. Add
filling which is made by frying the onions and mushrooms in butter until
soft.
- Add parsley, chives and season with salt and pepper.
- Cover filling with remaining nut and breadcrumb mixture.
- Cover with foil and bake at 180ºC for 30 minutes. Remove foil
and continue baking for 10 - 5 minutes until brown. Serve hot or cold.
