Macadamia nut crêpes and mushroom sauce

Makes : 8 crêpes


Ingredients :

  • For crêpes : ¾ cup wholemeal flour
  • 1 heaped tbsp skim milk powder
  • 2 eggs
  • 1 tbsp oil
  • 1 cup water
    For filling :
  • 1 large onion, finely chopped
  • 1 tspn oil
  • 250g cottage or ricotta cheese
  • 1½ cups macadamia nuts, chopped and roasted
  • ½ cup cooked brown lentils
    For sauce :
  • 1 tbsp butter
  • 1 tbsp oil
  • 1 onion, chopped
  • 2 cloves garlic, crushed
  • 200g mushrooms, sliced into "T" shapes
  • 150g tomato paste
  • 1 tspn basil
  • freshly ground black pepper
  • water or red wine, as required


Preparation and Cooking Instructions :

  1. For crêpes : Put all ingredients into blender and mix until smooth.
  2. Put enough batter to just cover the base of preheated lightly oiled pan.
  3. Cook for 15 - 20 seconds on each side.
  4. For filling : Sweat onion in oil until soft.
  5. Mix all ingredients together and fill crêpes.
  6. Place on a lightly oiled baking tray and heat through in a moderate oven. Serve with mushroom sauce.
  7. For mushroom sauce : Fry onion and garlic in butter/oil mixture until brown; add garlic and mushroom slices and simmer until cooked.
  8. Add tomato paste, basil, pepper, and sufficient water or wine to make the right consistency.
