Spinach and Pinenut quiche

Ingredients :
- puff pastry
- 2 cups cooked silverbeet or spinach
- 2 tbsp butter
- salt and black pepper, to taste
- 250g cottage cheese
- 3 eggs, lightly beaten
- ¼ cup grated Parmesan cheese
- 3 tbsp thick cream
- nutmeg
- ½ cup pine nuts, lightly browned in butter
Preparation and Cooking Instructions :
- Line quiche dish with pastry.
- Cook spinach 9 or green leaves of silverbeet) with butter, salt and
pepper for 5 - 10 minutes or until soft. Drain and purée in food
processor.
- Beat together cottage cheese, eggs, cheese, nutmeg and ream. Stir
in spinach and pinenuts.
- Put into pastry shell, cook for 30 - 40 minutes in moderately hot
oven ( 190º - 200ºC ).
