Makes : 2 cups
Ingredients :
- ½ cup corn kernels
- 1 medium red bell pepper, stemmed, seeded, and cut into small dice
- 1 jalapeño chili, stemmed and minced
- ¼ medium onion, finely chopped
- ½ cup chopped cilantro leaves
- pinch ground cumin
- ½ tspn salt
- 1 tspn tomato paste
- ½ cup water
Preparation and Cooking Instructions :
- Bring a small pot to a boil. Drop in the corn. Drain immediately and
set aside to cool.
- When cool, place the corn and the remaining ingredients in a medium
bowl and gently stir together. Use right away or cover, chill, and use
the same day
