Corned beef hashburger

Ingredients :
- 1 large potato, peeled and grated
- 250g cooked corned beef, cut into thin strips
- 1 egg, lightly beaten
- ½ tspn ground black pepper
- 2 tbsp cream
- 1 tspn horseradish
- 30g butter
- 1 tbsp oil
- 4 eggs, extra
- ½ cup grated cheddar cheese
- 1 large French stick
- green coral lettuce
- ¼ cup mild pickled peppers, finely sliced
- barbecue sauce
Preparation and Cooking Instructions
- Place potato in muslin or fine strainer and squeeze out excess moisture.
Combine potato, corned beef, egg, pepper, cream and horseradish in medium
bowl. Mix well. Divide combined mixture into 4 portions and shape into
long patties.
- Heat butter and half the oil in large frying pan. Add patties, cook
over medium heat 3-4 minutes each side or until golden brown and lightly
crisp. Drain on paper towels.
- While patties are cooking, heat remaining oil in medium frying pan.
Break eggs into pan. Cook over medium heat until almost set. Sprinkle
cheese over each and cook until cheese melts.
- Cut bread stick into 4 sections. Split each in half horizontally and
toast lightly on the cut side. Spread with butter if desired. Place
bread bases on serving plates. On each base place a lettuce leaf, a
patty, an egg, pickled peppers, sauce and remaining bread.
