Creole Mustard Sauce

Ingredients : Recipe 1

  • ¾ cup heavy whipping cream
  • ¾ cup Creole mustard
  • ¼ cup sour cream


Preparation and Cooking Instructions :

  1. In a small saucepan, bring the cream to a low boil over medium heat. Whisk in the mustard and sour cream and simmer for 5 minutes. Hold warm.

Ingredients : : Recipe 2        This is more like a classical sauce

  • 2oz shallots, minced
  • 1oz cider vinegar
  • ½ tspn black peppercorns, cracked
  • 1 small bay leaf
  • ½ cup dry white wine
  • ½ cup heavy cream
  • 8oz unsalted butter, softened
  • ¼ cup Creole mustard
  • 2 tbsp Dijon mustard
  • 2 tbsp spicy brown mustard


Preparation and Cooking Instructions :

  1. Combine the shallots, vinegar, peppercorns, bay leaf, and wine. Reduce the mixture to about 6 ounces. Add the cream and reduce by half. Strain the sauce and return to the heat. Whisk in the butter gradually over low heat. Add the mustards.
