Crisp-skinned duck with plum sauce

Ingredients :
- 2 x 2kg ducks
- 2 tspn cayenne pepper
For plum sauce :
- 1 cup plum jam
- ½ cup chicken stock
- 1 tspn cayenne pepper
Preparation and Cooking Instructions
- Place ducks on wire rack in baking dish. Bake, uncovered, in moderate
oven about 1 hour or until tender; cool.
- Place duck on board, cut along each side of backbone; remove and discard
backbone. Cut duck in half through breast bone, remove and discard ribcage.
Repeat with remaining duck. Sprinkle skin with cayenne. Place ducks,
skin side up, on wire rack over baking dish. Bake, uncovered, in moderately
hot oven about 35 minutes or until skin is crisp. Serve with plum sauce.
- For plum sauce : Combine all ingredients in small pan, simmer,
uncovered, until slightly thickened.
