Basted Duck with oyster sauce

Ingredients :

  • 6lb duck
  • 1 tspn salt
  • ¼ tspn pepper
  • 1 qt bread stuffing mix
  • 1 cup oysters
  • ¼ cup butter
  • ¼ cup lemon juice
  • ¼ tspn paprika
  • pinch thyme


Preparation and Cooking Instructions :

  1. Season duck cavity with salt and pepper.
  2. Add oysters, drained and chopped, to bread stuffing. Use oyster liquid as part of liquid to moisten the stuffing. Lightly stuff duck.
  3. Place remainder in separate pan to bake with duck. Mix butter, lemon juice, paprika and thyme for basting.
  4. Bake duck on rack in covered roaster in 325°F oven for about 2½ hours. Baste often with lemon mixture and with duck drippings. Remove cover for the last 15 minutes to brown duck.
