Duck poached with tangerine peel

Ingredients :
- 2.5kg duck
- 7½ cups water
- 60g tangerine peel, dried
- 1 tspn ground ginger
- 2-3 spring onions, cut into 2" lengths
- salt and pepper, to taste
Preparation and Cooking Instructions
- Place all the ingredients together in a large saucepan. Simmer slowly,
covered, for 2½ - 3 hours, until the duck is tender. Drain. Serve,
seasoned with salt and pepper to taste.
