Duck poached with tangerine peel

Serves : 6  Preparation time : 3 minutes  Cooking time : 2½ - 3 hours

Ingredients :

  • 2.5kg duck
  • 7½ cups water
  • 60g tangerine peel, dried
  • 1 tspn ground ginger
  • 2-3 spring onions, cut into 2" lengths
  • salt and pepper, to taste

Preparation and Cooking Instructions

  1. Place all the ingredients together in a large saucepan. Simmer slowly, covered, for 2½ - 3 hours, until the duck is tender. Drain. Serve, seasoned with salt and pepper to taste.
