Duck with black beans ~ Dow See Ngap

Serves : 4  Preparation time : 10 minutes + 5 mins standing  Cooking time : 5 minutes

Ingredients :

  • 250g roast duck, sliced
  • ½ tspn salt
  • pinch sugar
  • sesame oil, a few drops
  • 1 tspn soya sauce
  • 2 tbsp cornflour
  • 4 slices fresh ginger
  • 2 tbsp canned black beans
  • 1 clove garlic, crushed
  • 1 tbsp chopped onion
  • 2 tbsp peanut oil
  • ¾ cup chicken stock
  • 1 tbsp Chinese wine or sherry
  • 2 tbsp cold water

Preparation and Cooking Instructions

  1. Put duck meat in a bowl, sprinkle with salt, sugar, sesame oil, soya sauce and 1 tbsp cornflour. Mix well and leave to marinate for 5 minutes.
  2. Chop the ginger with the beans, add the garlic and pound together to a paste. Fry the onion in peanut oil for 1 minute, without allowing it to brown. Add black bean paste and cook, stirring all the time, for 1 minute. Add duck, stir and moisten with stock and wine. Cook for 1 minute. Check seasoning, adjusting if necessary.
  3. Blend the remaining cornflour with the cold water, stir into pan, and cook for 1 minute until the sauce thickens. Serve.
