Duck with prawns and bamboo shoots ~ Har Yen Sam See Ngap

Ingredients :
- 2.5kg duck and giblets
- 1 tspn salt
- 1 tbsp soya sauce
- 1 tbsp brandy
- 1 tspn cinnamon
- 60g bamboo shoots
- 1 tbsp oil
- 1 clove garlic, crushed
- 250g prawns, peeled
- 250g fresh mushrooms, sliced
- 5 cups water
- 1 tspn cornflour
Preparation and Cooking Instructions
- Clean and wash the duck, reserving giblets; rub bird with salt. Combine
soya sauce, brandy and cinnamon and brush the duck with this mixture.
Slice the giblets and bamboo shoots. Heat oil with garlic in a large
pan, put in duck and giblets, fry until brown.
- Add prawns, bamboo shoots, mushrooms and the rest of the mixture used
for brushing the duck. Add water, simmer gently for 2 hours, then add
cornflour blended with 2 tbsp cold water. Reheat and serve
