Ingredients :
- For egg mixture : 8 eggs
- 2 cups dashi
- 6 grilled eels ~ Unagi
no kabayaki
- 1½ tspn soya sauce
- pinch salt
- pinch sugar
For sauce mixture :
- 2 cups dashi
- ½ tspn salt
- 1 tspn sugar
- 1 tspn cornflour
- 1 tspn cold water
Preparation and Cooking Instructions
- For egg mixture : Mix all ingredients together, pour into square
mould or a biscuit tin and steam for 45 minutes. When cooked, turn out
and cut into 2" squares.
- For sauce mixture : Heat the dashi, add salt and sugar. Blend
the cornflour with the water, stir into sauce, cook until it thickens.
Pour over the egg and eel squares and serve at once.
- Cooks notes : Unagi no kabayaki is available in cans, in which
case the eels will require no cooking, just cutting to length.
