Salade Niçoise

Serves : 4 - 6


Ingredients :

  • ½ crisp lettuce
  • 3 eggs, hard-boiled
  • 1 x 400g can artichoke hearts
  • 1 x 200g can tuna
  • 1 x 50g jar anchovy fillets
  • 250g (8oz) tomatoes, skinned and quartered
  • 125g (4oz) green beans, cooked
  • 8 - 10 black olives, pitted
  • 1 - 2 tspn capers
  • 1 tbsp chopped parsley
    for dressing :
  • 2 tbsp lemon juice
  • 4 tbsp olive oil
  • 1 clove garlic, crushed
  • pinch of sugar
  • salt and pepper, to taste
  • ½ tspn French mustard


Preparation and Cooking Instructions :

  1. Line a serving bowl with the lettuce.
  2. Cut the eggs into quarters. Drain the artichoke hearts, tuna and anchovy fillets and arrange in the prepared bowl, together with the remaining salad ingredients.
  3. Put the dressing ingredients in a screw-topped jar and shake well. Pour over the salad, toss well and serve immediately.
