Salade Niçoise

Serves : 4 - 6
Ingredients :
- ½ crisp lettuce
- 3 eggs, hard-boiled
- 1 x 400g can artichoke hearts
- 1 x 200g can tuna
- 1 x 50g jar anchovy fillets
- 250g (8oz) tomatoes, skinned and quartered
- 125g (4oz) green beans, cooked
- 8 - 10 black olives, pitted
- 1 - 2 tspn capers
- 1 tbsp chopped parsley
for dressing :
- 2 tbsp lemon juice
- 4 tbsp olive oil
- 1 clove garlic, crushed
- pinch of sugar
- salt and pepper, to taste
- ½ tspn French mustard
Preparation and Cooking Instructions :
- Line a serving bowl with the lettuce.
- Cut the eggs into quarters. Drain the artichoke hearts, tuna and anchovy
fillets and arrange in the prepared bowl, together with the remaining
salad ingredients.
- Put the dressing ingredients in a screw-topped jar and shake well.
Pour over the salad, toss well and serve immediately.
