Makes : 2 cups
Ingredients :
- 4 - 6 small fresh chilies, such as jalapeño, serranos, güeros,
or a mixture
- ½ small onion
- 2 medium tomatoes
- 3 large radishes, trimmed
- 1 cup cilantro leaves
- 1 garlic clove (optional)
- ¼ tspn salt
- 1 tbsp tomato paste (optional)
- ¼ - ½ cup water, as needed
Preparation and Cooking Instructions :
- Using a food processor or chefs knife, chop the chilies, onion, tomatoes,
radishes, cilantro, and garlic, if using, into very small pieces. Transfer
the vegetables to a medium bowl and stir in the salt, tomato paste,
if using, and enough water to make a moist, saucy mixture, use right
away or cover and refrigerate for up to 3 days.
