Fried Brussels sprouts ~ Chow Choy Lui

Ingredients :
- 6 Brussels sprouts
- 1 clove garlic, crushed
- 1 tbsp peanut oil
- 4 tbsp chicken stock, hot
- ½ tspn soya sauce
- pinch each of salt and sugar
- ½ tspn cornflour
- 1 dspn water
Preparation and Cooking Instructions
- The sprouts should be firm and compact. If small, they can be left
whole but it is a good idea to choose larger ones and cut in half. In
either case, remove and discard any damaged outer leaves.
- Drop them into boiling water and boil for 4-5 minutes, depending on
size. Drain them well. Lightly brown the garlic in hot oil and then
discard garlic pieces, retaining flavored oil. Add the sprouts to the
oil and cook for 2 minutes, tossing occasionally.
- Add the stock, soya sauce and seasonings and bring to the boil. Push
the sprouts to one side of the pan and stir the cornflour, blended with
the water, into the boiling liquid. Cook for 1½ minutes. Place
the sprouts in a heated dish; pour the sauce over them and serve.
